Our gulf seafood processing has operated out of New Orleans, Louisiana since 1982. That’s over three decades of experience providing only the best seafood to the customers who depend on us. Our factory has grown from a new, small business to approximately 30,000 square-feet, split into workshops that include:

We sell two types of shrimp: Penaeus Setiferus (white shrimp) and Penaeus Aztecus (brown shrimp.) Once you’ve chosen which type you prefer, we can sell that shrimp head-on, headless, EZ-PEEL, peeled, or even peeled and deveined. We also offer said shrimp raw, ready-to-cook, cooked, or ready-to-eat.
We then take your preferred shrimp and provide it either as a 5# Block Frozen or IQF (4/5# Bulk and Retail Ready 10/2#, 20/1#.)
Over a decade ago, Tommy pioneered a unique freezing process for all of our sustainable seafood. By converting to CO2 freezing at -90° F, versus traditional freezing methods, he was able to provide higher-quality seafood than any of his competitors.
For instance, Tommy’s retail-quality shrimp are frozen within minutes—not hours—to seal the freshness, flavor, and texture inside from the very beginning.
